I often find myself rebuilding only the spiral pinion, a craftsman with good experience already at the joke understands whether it's 35 degrees, or less .. if it's less than 35 you start rubbing the pinion with 30 degrees, with the help of the tester it achieves good contact, decreasing or increasing radial.
for when it comes to hypoid sets, I have a fornmula
25 ° + 5 (√; N + n) +90 (E / D)
N= teeth gear
n= teeth pinion
E = offset
D= pitch diameter gear
so you can start from this spiral angle, then you always have to check on the tester, to find the exact spiral...
