The large square opening in the front will accept a chip basket that is much easier to empty than scooping chips up by hand, shovel, etc. It will sit on the cast-in rails for drainage. I think you could buy or make a steel or plastic pan that will fit in the opening. Punch a bunch of small holes in the bottom to let oil drain out. After it has drained overnight, chips will be pretty dry.

If it's tall enough to just fit in the opening, that will prevent a lot of splashing.
